Simple Plant-based Creamy Mushroom Soup

Ingredients: 1 large onion, 2 cloves garlic, 1/2 pound mushrooms, 1 can (15 oz) vegetable broth, 1/2 can (apx. 7 oz) coconut milk, salt and pepper to taste, (optional celery, corn, dash of cumin)

Instructions: Add all ingredients to the crockpot. Cook on high for 4-6 hours or low for 8-10 hours. Enjoy as is or blend until smooth for a creamy soup. If using a stovetop pot, combine all ingredients and bring to a boil, then turn down and let simmer until mushrooms are soft and tender.
