Meal Plan for the Week of May 5, 2024

This week is a busy work week and this week's meal plan is all about efficiency and keeping it simple using what we have on hand. Towards the end of last week I prepped a few things ahead to help including a black bean burger patties that double so well as meatballs too! Frozen peppers in the freezer will assist with the ease of adding some veggies to this week's meals while the black bean burgers and "meatballs" will add some fun protein. I'll add the recipe for those versatile protein crumbles here soon!


Monday

Breakfast: Oatmeal and banana

Lunch: PB&J + spring salad with plant-based meat crumbles (prepped ahead), Violife feta and tomatoes, apple slices

Dinner: Pasta with marinara sauce, bell peppers, and black bean plantbased "meatballs"



Tuesday

Breakfast: Oatmeal and banana

Lunch: PB&J + spring salad with plant-based meat crumbles (prepped ahead), Violife feta and tomatoes, apple slices

Dinner: Buffalo chick'n sandwiches with quinoa salad



Wednesday

Breakfast: Oatmeal and banana

Lunch: PB&J, greens, quinoa and apple slices

Dinner: Tofu, rice and peppers with leftover dumpling sauce



Thursday

Breakfast: Oatmeal and banana

Lunch: PB&J, greens, quinoa and apple slices

Dinner: Grilled cheese sandwiches with buffalo salad on the side



Friday

Breakfast: Oatmeal and banana

Lunch: Seitan & Mustard sandwich

Dinner: Plant-based pizza



Saturday

Breakfast: Oatmeal and banana

Lunch: (Lunch out with family)

Dinner: (Dinner out with family TBD)



Sunday

Breakfast: Oatmeal and banana

Lunch: Seitan sandwich

Dinner: (Moe's Mother's Day meal with family)
